MICROBIOLOGICAL CONTAMINATION OF STREET MEAT SALES

Abstract
In the frame of Czech-Vietnam Project connected with risk management, a survey into hygiene practice observation in fresh pork meat street sales was performed. Survey was performed by observing basic hygiene requirements as to sale area, protection against sunshine and insects (flies) hygienic manners of merchants, the use of wrapping materials, frequency of cleaning and desinfection in each stall. After recording the above parameters, swabs and meat were taken for microbiological examinations. Results revealed that in 65% samples examined TPC/g was very high in case of swabs and in 55% of meat samples presence of pathogens was found. Meat temperature was recorded at the same time and compared to environmental one.
